Not bragging- is vegetarian too! and quite tasty, not very difficult. can be served without the frills and fancies of the icing too!

Cocoa powder – 3 to 4 heaped tbsp
Condensed milk- 400 gms (1 tin)
Aerated cola drink( E.g. Pepsi) – 200 ml

2 - 2/3 cups confectioner's sugar or icing sugar
1/3 cup unwhipped whipping cream or milk
1 1/2 teaspoons vanilla essence
1/2 cup unsweetened cocoa powder, sifted (for medium)
Cream the butter in a small bowl.
Blend in the cocoa powder (the amount desired for a light, medium or dark flavor), vanilla, confectioners sugar, alternately with the cream.
Beat with an electric mixer or whip well, until the desired texture is achieved.
More cream may have to be added in order to reach desired consistency.

Directions for Cake:
Sieve together the flour, cocoa powder and baking powder.
Melt the butter, let cool to room temperature.
Pour in condensed milk into butter and mix well.
Grease and flour a baking dish.
In another bowl, place the flour-baking powder-cocoa.
Into this, in parts, pour the cola, then the butter-condensed milk mixture and mix.
Pour till both get over. Add the vanilla essence
Pour immediately into baking dish and bake at 180 degree c for 35 to 40 minutes.
Insert knife in the centre of cake to check, if it comes out clean, it is done, or else, let it cook for 10 more minutes.

Let it stand in oven for 5 minutes atleast before finally removing.

hey! i tried my darling cake in the microwave-with a lot of trepidation, came out perfect, just increase butter by 25 grams and bake on HIGH for 5 minutes. Stand for 3-4 minutes. comes out G-R-E-A-T!!

The cake tastes great as it is. If desired, when cool, cut in half horizontally.
Grate dark chocolate and place on one half, place the other on it.
On the top of cake, top with icing and glazed cherries.
If not wanting the icing, you can top with grated dark chocolate and cherries.

Alternatively, you can use vanilla icing.

  1. Chocolate layering and layer: I used Morde's Milk Chocolate Compound-150 gms and 1/2 glass milk boiled down for a minute. This will be the layer. I used 2 tbsp for inside layers of cake. I poured 1/3rd of cake batter, spread 1 tbsp of paste. Then another 1/3rd of batter, spread paste, pour rest of batter.
Now there will be about 1/2-1/3rd of your chocolate mix left. Mix another 1/2 to full glass of milk and heat. This requirement depends on whether it is full-toned or half-toned milk. Stir and boil for 4 minutes till it thickens to light dropping consistency. Use this as icing, along with cherries.
If you don't have chocolate Compound, use standard milk chocolate or dark chocolate and a tsp of butter with milk.
