Yummy layered cutlets




Came up as a A+B+C+D dish.Tasted yummy and filled everyone's stomach. Has vegetables,cottage cheese,bread and spices.

Ingredients

Inner Layer
Cottage Cheese-150 grams
OR
Hung Curd(yummy healthy option)
Chaat Masala-2 tsp
Black salt-to taste
Black pepper powder-1 tsp or to taste

Crumble Cottage Cheese or roughly press hung curd.
Mix spices into it and make soft stuffing.

Alternate-Crumbled cheese to which red chilli flakes/oregano may be added. Gives a gooey yummy centre that children can't get enough of!

Outer Layer
Boiled vegetables(carrot,corn,green peas,cauliflower,beetroot)-250 gms
Potatoes-2
Bread-2 slices
Onion-2
Crushed Ginger-green chilli:1 tbsp
Salt-to taste
Pepper-to taste
Breadcrumbs or semolina(sooji)- to coat
Oil- to shallow fry

Do not boil the vegetables till too soft.
Drain water and leave on strainer till dry.
Mash lightly,mix salt,pepper and crushed ginger-chilli.
Mix in mashed potatoes and crumbled bread slices to make mix for outer layer.
Stuff in cottage cheese mix.Seal well.
Roll in semolina or breadcrumbs.
This can be shallow fried or cooked on a skillet(tava)
Serve hot with ketchup or mint and chilli chutney

Dahi Pakhala (Orissa)

Cooked rice soaked in water and seasoned. This is a rice preparation native to Orissa. It is excellent for summers as it cools the body and relieves dehydration. Typically, it is made by fermenting the rice overnight in the water and had in the morning or in the evening there fore called “Basi Pakhala” literally meaning “Stale Pakhala”, but it is named so as it is made from the previous day’s rice. I give my father’s recipe and as we enjoy it at home, well seasoned. Vegetarian (Eggless) Pancakes with Fruit Sauce and Honey

Ingredients (Serves 3-4) Pancake Batter 200 gms maida (refined flour) Healthy option: 100 gms refined flour + 100 grams wheat flour 1 1/2 to 2 cups luke warm milk 1/2 cup room temperature water Baking soda/ baking powder- 1/2 tsp Cocoa powder- 2 tbsp (Optional) Powdered Sugar- 2 tbsp (can be increased to suit your taste) Butter or oil to cook Stuffing Apples: 2 (Peeled,Cored and pithed) Sugar- 1 and 1/2 tsp Cinnamon powder- 1 pinch Nuts-Almonds and Cashews- chopped and crushed (optional) Honey to serve Batter Sieve the flour(s) and baking soda (with cocoa powder) together in a large bowl. Add the milk, sugar powder and water gradually. You may need more water to make it into a semi- fluid batter, similar to cake batter. Let it rest for 5 minutes at max. Stuffing Heat a non-stick pan.
