Garlic Spiked Drumstick Fritters

Drumsticks are seen as boring vegetables.This interesting spicy version makes a lip-smacking accompaniment and stand-alone version of this nutritious vegetable.This recipe can be made with beans,potatoes and cauliflowers too!Be free to experiment.A personal favourite, especially in hot summers with "Pakhala" or rice.



Ingredients

Drumsticks- 6
Garlic- 7 to 8 cloves (can increase if you like the flavour)
Green chilies-2
Salt- 1/2 tsp and more to boil
Rice flour- 2 to 3 tbsp
Oil - 3 tbsp
Water to boil the drumsticks in
Oregano- 1/2 tsp (Optional)

Chop drumsticks in to French fries sized (3 inch) long pieces)



Boil in sufficient water with salt to taste.
Cook till tender,but not very soft.
* You can see the seed getting separated from the flesh inside,the drumsticks shouldn't start splitting. Can press one and check-not raw not totally cooked.
Chop garlic and green chilli into small pieces.
Pound together coarsely.
Drain water from drumsticks and transfer to broad bowl to mix.
Add paste.mix wel and leave for 15-20 minutes atleast.
Add DRY rice flour (rice powder) and toss.
Heat oil in a pan (non stick preferred).
When hot,shallow fry till brown and crisp on all sides.
Serve with rice dishes or as a tasty snack/appetizer.

Dahi Pakhala (Orissa)

Cooked rice soaked in water and seasoned. This is a rice preparation native to Orissa. It is excellent for summers as it cools the body and relieves dehydration. Typically, it is made by fermenting the rice overnight in the water and had in the morning or in the evening there fore called “Basi Pakhala” literally meaning “Stale Pakhala”, but it is named so as it is made from the previous day’s rice. Vegetarian (Eggless) Pancakes with Fruit Sauce and Honey

Ingredients (Serves 3-4) Pancake Batter 200 gms maida (refined flour) Healthy option: 100 gms refined flour + 100 grams wheat flour 1 1/2 to 2 cups luke warm milk 1/2 cup room temperature water Baking soda/ baking powder- 1/2 tsp Cocoa powder- 2 tbsp (Optional) Powdered Sugar- 2 tbsp (can be increased to suit your taste) Butter or oil to cook Stuffing Apples: 2 (Peeled,Cored and pithed) Sugar- 1 and 1/2 tsp Cinnamon powder- 1 pinch Nuts-Almonds and Cashews- chopped and crushed (optional) Honey to serve Batter Sieve the flour(s) and baking soda (with cocoa powder) together in a large bowl.
