Vegetarian (Eggless) Pancakes with Fruit Sauce and Honey



Ingredients
(Serves 3-4)
Pancake Batter
200 gms maida (refined flour)
Healthy option: 100 gms refined flour + 100 grams wheat flour
1 1/2 to 2 cups luke warm milk
1/2 cup room temperature water
Baking soda/ baking powder- 1/2 tsp
Cocoa powder- 2 tbsp (Optional)
Powdered Sugar- 2 tbsp (can be increased to suit your taste)
Butter or oil to cook

Stuffing
Apples: 2 (Peeled,Cored and pithed)
Sugar- 1 and 1/2 tsp
Cinnamon powder- 1 pinch
Nuts-Almonds and Cashews- chopped and crushed (optional)
Honey to serve

Batter
Sieve the flour(s) and baking soda (with cocoa powder) together in a large bowl. Add the milk, sugar powder and water gradually. You may need more water to make it into a semi- fluid batter, similar to cake batter.

Let it rest for 5 minutes at max.

Stuffing
Heat a non-stick pan. Add a little butter (half a teaspoon). Fry sliced apples slightly and add sugar when the apples are slightly brown. Keep aside for stuffing.
Alternatively, You can caramelize the sugar and add the apples and stir till coated.

Stuffing/ Fruit sauce
Apples: 2 (Peeled,Cored and pithed)
Bananas-1
Sugar- 1 and 1/2 tbsp. Water- 1/ cup
Cinnamon(dalchini) powder- 1 pinch
Nuts-Almonds and Cashews- chopped and crushed (optional)
Honey to serve
Boil sugar in water to make a thin syrup. Add chopped fruits, cook covered till tender. Add cinnamon powder, switch off add a spoon of milk and sprinkle nuts. You can pour honey then according to how much of sugar you like

The Pancakes
Heat a skillet. Add butter or oil and heat. Pour a large spoonful of batter and form a pancake. Flip over when browned.Cook on both sides. Put apple stuffing on 1 half, sprinkle nuts, a dollop of honey and serve. It can be served with some peanut butter or jam spread on top too..Kid love it! And so do we.

Papita ke Kofte(Green Papaya Dumplings in Gravy)

Papad Curry

The Name has got me quite a few 'Umms' and 'Ayes' from people when I offered to make it for them. But, the unique taste and flavour is quite tasty and is enjoyed by many. A welcome break from usual vegetable curries. The recipe was given to me by an aunty and is quite a combination of strong flavours like onion-garlic in the paste and calming flavours like curd.
